Rice and hearty lentils cooked together and topped with caramelized onions. Served hot.

Recipe Ingredients for Mjadarah (Rice and Lentil Pilaf) (Neomonde)

1/2 cup vegetable oil
2 medium yellow onions
1 cup lentils
1 cup rice
4 cups water
1 tsp. salt

Recipe Directions for Mjadarah (Rice and Lentil Pilaf) (Neomonde)

  1. Heat the oil in a large saute pan over medium-high heat. Add the onions and saute 5 to 7 minutes until well-browned but not burned. Turn off heat and set onions and oil aside.

  2. Rinse lentils, picking over them to remove any small stones or debris.

  3. Place lentils in a large pot and add enough water to cover by 2 inches.

  4. Bring to a boil and cook for 5 minutes. Drain lentils (they will not be fully cooked at this point) and rinse well.

  5. Return lentils to the pot. Rinse and drain the rice, and add it to the pot.

  6. Add about half the onions, along with as much of the oil as can be poured off. Add the water and salt, give the mixture one good stir, and bring to a boil. Reduce to a simmer and cook (do not stir), uncovered, until all the water has been absorbed by the rice or evaporated, about 20 minutes.

  7. Add more salt if needed, and transfer pilaf to a serving dish. Top with the remaining sauteed onions and serve.

  8. Note: Any vegetable oil with a relatively neutral taste will do. If using olive oil, use pure rather than extra virgin, whose taste would be overpowering.
