Recipe Ingredients for Mixed Veggies in Spicy Peanut Sauce

2 onions, finely chopped
6 medium carrots, thinly sliced
4 stalks celery, diced
2 tbsp ginger root, minced
4 cloves garlic
1/2 tsp peppercorns, cracked
1 cup vegetable broth
3 cups frozen green beans, sliced
1/2 cup peanut butter, light
2 tbsp soy sauce
2 tbsp fresh lemon juice
1 tbsp maple syrup
2 tsp Thai red curry paste
4 cups cabbage, shredded

Recipe Directions for Mixed Veggies in Spicy Peanut Sauce

  1. Saute the onions, carrots and celery in a small amount of water until softened, about 7 minutes, stirring often. Add ginger root, peppercorns and garlic, stirring for about 1 minute.Transfer to slow cooker stoneware. Add vegetable broth and stir well.

  2. Add green beans and stir well. Cover and cook on Low for 6 hours or on High for 3 hours, until vegetables are tender.

  3. In a bowl, beat together peanut butter, soy sauce lemon juice, maple syrup and red curry paste until blended. Add to slow cooker stoneware and stir will. Add cabbage, in batches, stirring until each batch is submerged in liquid. Cover and cook for 10 minutes, until heated through.

  4. If desired, top with sliced green onions and chopped dry roasted peanuts.
