Recipe Ingredients for mixed vegetables

1 small onion
2 cups broccoli
1/2 eggplant
1 courgette
1 cup, whole (96.0g) mushroooms
2 tbsp olive oil
1 tbsp salt
1 tsp black pepper
1 cup (180.0g) tomato

Recipe Directions for mixed vegetables

  1. chop & cook the onion in the olive oil; add the sliced mushrooms & allow to cook for 5min. Add the tomato and allow to reduce.

  2. Meanwhile chop all other veg & ad to tomato & mushrooms.
