Another veggie quiche -- low fat.

Recipe Ingredients for Mixed Vegetable Quiche

256 g fajita-style wraps
2 c egg beaters original
2 c nonfat cottage cheese
16 oz frozen mixed vegetables
1 medium onion

Recipe Directions for Mixed Vegetable Quiche

  1. Chop onion.

  2. Cook vegetables and onion in pot with about 2 cups water for about 10-15 minutes

  3. Drain

  4. Stir together the Egg Beater and cottage cheese.

  5. Add pepper, salt and spices as desired

  6. Gradually add the drained vegetables to egg mixture.

  7. Press tortillas into round foil pans

  8. Divide the egg mixture into the pans

  9. Bake at 350 for about 45 minutes.
