Recipe Ingredients for Mixed Vegetable Minestrone Soup

2 tbsp Olive Oil, Extra Virgin
2 cups Onion, Finely Chopped
2 cloves Garlic, Crushed With Press
28 oz Tomatoes Diced
4 cups Water
5 1/2 cups Swiss Chard,leaves only chopped. Discard Stems
1 lb Carrots sliced to 1/2 inch
1/2 lb Green Beans Cut To 1/2 inch
1 1/2 lb Soybeans Frozen Shelled Edamame
15 oz Cannellini Beans (White Kidney Beans]
1/8 box Tubetti Pasta or about 1 cup
1 tsp salt
1 tsp pepper

Recipe Directions for Mixed Vegetable Minestrone Soup

  1. In 5-6 Qt Pot heat 1 tbsp oil on med until hot.

  2. Stir in onion, garlic, salt,pepper.

  3. Cover and cook 4-5 minutes or until tender.

  4. Add tomatoes and water.

  5. Heat to boiling on med-high.

  6. Add carrots; cover and cook10 minutes, stirring occasionally.

  7. Add chard and green beans and cook 6 minutes or until beans are just tender stirring Occasionally.

  8. Add soybeans and kidney and cook 5 minutes or until edamame are just cooked through.

  9. Cook Tubetti Pasta per label directions. Drain and stir in with the soup.

  10. Serve with Parmesan cheese if desired.
