Vegetarian and Spicy... great for colds and preventing them

Recipe Ingredients for Mixed Vegetable Masala

10 slices ginger root
4 cloves garlic
4 roma tomatoes, chopped with juices
1/2 tsp cayenne pepper
1 med onion, chopped
1 yellow bell pepper, chopped
2 tbs canola oil
4 carrots, sliced
2 potatoes, cubed
2 tbs garam masala
1 tbs chilli powder
1 head cauliflower, chopped
1 cup water
1/2 cup coconut milk, lite

Recipe Directions for Mixed Vegetable Masala

  1. Comine ginger and garlic in food processor and pulse. Add tomatoes and cayenne, pulse to combine

  2. Saute onions and peppers in oil over medium till soft. Add potatoes, carrots and remaining spices and cook 10-15 min covered.

  3. Add cauliflower, tomatoe mixture, and water and simmer until all veggies are tender.

  4. remove from heat and stir in coconut milk
