Recipe Ingredients for Mixed Vegetable and Lentil Curry

250 g red lentils
4 tbsp oil
1 large onion
1 tsp turmeric
1 tsp cumin seeds
1 tsp chilli powder
1 tsp coriander
250 g cauliflower
250 g courgette
175 g green beans
175 g mushrooms
250 g carrots

Recipe Directions for Mixed Vegetable and Lentil Curry

  1. Place lentils and 750ml of water in a pan. Bring to the boil, then cover and simmer for 15 minutes.

  2. Heat the oil in a large pan, sauté the onion and carrots for 5 minutes. Add all the spices and the garlic and cook for 2 minutes, stirring constantly.

  3. Add the cauliflower, courgettes, green beans, mushrooms and lentils, cover and simmer for 10 minutes.

  4. Stir in the salt (to taste), cover and simmer for 5-10 minutes, until the vegetables are just tender.

  5. Serve
