A good way to increase veggie servings. Watch the servings and sodium amount. Can use colby/jack shredded cheese for lower sodium and unsalted crackers.

Recipe Ingredients for Mixed Vegetable Casserole

32 oz mixed vegetables, frozen
8 oz american cheese, 2% (velvetta)
1 cup crackers, buttered-flavored, crushed
1/3 cup margarine
1/2 cup onion, chopped
1/2 tsp salt
1/2 tsp pepper

Recipe Directions for Mixed Vegetable Casserole

  1. Place vegetables and 1/4 cup water* in 13 X 9 baking dish that has been sprayed with cooking spray.

  2. Sitr in onions, salt and pepper.

  3. Cut up cheese in small pieces and scatter over top of veggies. (if using block cheese)

  4. Top with cracker crumbs.

  5. melt margarine and pour over crumbs.

  6. Bake at 400 degrees until bubbly and brown.

  7. About 20-25 minutes.

  8. * more liquid can be added for moister casserole.
