quick and easy- good with left overs- use the veg you want this is what needed using up in my house.

Recipe Ingredients for mixed veg soup

8 oz carrot
8 oz onion
12 oz parsnip
4 oz celery
2 pints of water
1 stock cube

Recipe Directions for mixed veg soup

  1. Chop or grate all veg.

  2. Put all ingredients in pan and boil until soft.

  3. Adjust seasoning to taste.

  4. Can be frozen well.
