Sauteed Zucchini, Carrots & Red Bell Pepper

Recipe Ingredients for Mixed Veg saute

3 carrots, chopped
500 grams zucchini, chopped
3 red bell peppers, chopped
2 onions, chopped
1 clove garlic, minced
1 tbs olive oil
1 salt
1 pepper

Recipe Directions for Mixed Veg saute

  1. Put zucchini in a colander and sprinkle a good amount of salt over it. Let it rest in the sink like that for at least 15 minutes (this takes the bitter out).

  2. In the meantime, saute onions first till translucent, add carrots and saute for a few minutes then zucchini and red bell peppers - salt and pepper to taste.
