Makes 6 servings



Summer squash and mushrooms. For a variety, add tomatoes or grill all vegetables. Serve 1 cup of mixture.

Recipe Ingredients for Mixed Squash

16 11/20 oz. yellow squash, sliced
16 1/2 oz. zucchini, sliced
8 oz. mushrooms, sliced

Recipe Directions for Mixed Squash

  1. Cut yellow, zucchini and mushrooms into slices.

  2. In a non-stick fry pan, spray Pam or other non-stick, no calorie spray.

  3. Fry each squash, then mushrooms separately.

  4. Add pepper, garlic and other seasonings to taste.

  5. After frying, set in a large bowl, and stir as you add cooked squash and mushrooms.

  6. Serve hot with low fat shredded cheese or Parmesian cheese.
