Highly Beneficial for Blodd Type A Served with crusty spelt bread and a salad, this becomes an easy and a filling supper during the Fall or Winter

Recipe Ingredients for Mixed Roots Soup

2 T olive oil
1 cup diced onion, diced
6 cloves garlic
1 cup rutabaga, diced
1 cup carrots, diced
1 cup parsnips, diced
6 cups water

Recipe Directions for Mixed Roots Soup

  1. heat oil. Add onion and garlic, sauteing till fragrant (~5 minutes)

  2. Add hardest veg (turnip) first, turning in oil a few times.

  3. Add carrots and parsnips, turning several minutes more.

  4. Pour boiling water to cover by an inch. Add salt and bay leaf.

  5. Simmer at least 45 minutes, or till veggies tender. Remove bay leaf.

  6. Coarsely mash in pot or in food processor, leaving some lumps.

  7. Springkle with parsley.
