2 cups romaine lettuce
1 cup arugula
1 cup baby spinach
1 tablespoon extra-virgin olive oil
1 ounce lemon juice

Recipe Directions for Mixed Greens Toss Up

  1. In a large bowl, toss the greens with the oil, lemon juice and salt and pepper, to taste.

  2. Arrange the greens on 4 individual plates, top with a scoop of the chicken salad and sprinkle with the almonds.
