Recipe Ingredients for Mixed Greens with Dried Cranberries and Toasted Pecans

1 cup toasted pecans
2 heads romaine lettuce, torn into small pieces
12 oz Mixed Baby Greens
1/2 cup red onion
1 cup dried cranberries
1/2 cup Feta cheese

Recipe Directions for Mixed Greens with Dried Cranberries and Toasted Pecans

  1. Preheat the oven to 350 degrees F. Toast the pecans in a shallow pan until they begin to get fragrant, about 7 to 10 minutes. Let cool completely.

  2. Combine the lettuce, baby greens, and onion in a salad bowl. Just before serving, pour on the dressing and toss well. Check to see if you need to add more dressing; you don't want to make the greens too wet. Serve on individual salad plates with the pecans, cranberries and the Feta cheese sprinkled on each portion.

  3. NOTE: ingredients are also well liked served like a buffet, letting each person pick and choose ingredients and portions.

  4. Lemon-Soy Dressing:

  5. 1 large garlic clove, minced

  6. 2 Tablespoons lemon juice

  7. 1 Tablespoon red wine vinegar

  8. 1 1/2 teaspoons soy sauce

  9. 1/8 teaspoon salt

  10. Generous seasoning freshly ground pepper

  11. 1/2 cup mild-flavored olive oil

  12. Place all the ingredients in a jar with a tight-fitting lid and shake vigorously.

  13. Yield: 3/4 cup
