Recipe Ingredients for Mixed Berry Pudding Cakes

5 strawberries
6 ounces blackberries
1 egg
1 tsp vanilla extract
1/4 cup sugar
1/8 cup all-purpose flour
1 tbsp unsalted butter, melted
1/2 cup skim milk
1/2 pinch cream of tartar

Recipe Directions for Mixed Berry Pudding Cakes

  1. Preheat oven to 350 degrees F. Divide berries among two 8-oz ramekins. Place ramekins in a baking pan with at least 1 inch of space all around them.

  2. In a large bowl, beat egg yolks with vanilla and sugar until thick and creamy. Whisk in flour, lemon juice, butter, and milk until smooth and thin. With a mixer on high speed, beat egg whites with cream of tartar until soft peaks form. Gently fold egg whites into yolk mixture.

  3. Divide batter evenly among ramekins. Place pan on pulled-out center rack of oven and pour hot water into pan to a depth of about 1 inch. Bake until tops of cakes spring back when lightly touched in the center, about 30 minutes. Remove ramekins and let stand for 5 minutes before serving warm.
