w/ Cinnamon whipped cream topping

Recipe Ingredients for Mixed Berry Muffins

4 oz unsalted butter
3/4 c sugar
2 eggs
2 tbs heavy cream
1 c heavy whipping cream
1/4 tsp vanilla
1/4 tsp salt
1 c flour
1/2 c blueberries
1/2 c blackberries
2 tbs powder sugar
1/2 tsp cinnamon

Recipe Directions for Mixed Berry Muffins

  1. mix butter and 3/4 sugar for 4-5 mins. add eggs, beat for 2 mins, add vanilla, 2 Tbs cream and salt - blend. Add flour. then stir in berries. put in muffin pan and bake for 30 min at 350.

  2. while baking, put 1 c cream, powder sugar, and cinnamon and beat on high until whipped cream.
