Little bundles of fresh heaven. Can be frozen Any type of berries can be used, fresh or frozen.

Recipe Ingredients for Mixed berry muffins

335 g self-raising flour
220 g caster sugar
1 tsp vanilla extract
2 eggs
100 g butter
1 cup milk
1 tsp lemon rind
200 g mixed berries

Recipe Directions for Mixed berry muffins

  1. Pre-heat oven to 200 Celsius & spray 12 hole muffin pan

  2. Sift flour, add sugar, the extract, egg, butter, milk and lemon rind. Add berries and stir gently

  3. Divide into muffin pan.

  4. Bake for 35minutes, stand in pan for a few minutes before turning out.
