Recipe Ingredients for Mixed Berry Crumble Cupcakes


For the filling:
400 g mixed berries
3 tbsp caster sugar
2 tbsp water
1/4 tbsp lemon zest

For the crumble:
2 tbsp butter, melted
4 tbsp plain flour
3 tbsp light brown sugar
4 tbsp porridge oats
1 tsp lemon zest

For the cupcakes:
360 g plain flour
150 g brown sugar
1 pinch of salt
2 tsp baking powder
115 g butter, melted
300 ml milk
1 egg

Recipe Directions for Mixed Berry Crumble Cupcakes

  1. Preheat the oven to 200C. Grease a 12 cup muffin pan.

  2. Combine all the filling ingredients in a small saucepan. Gently bring to a simmer and cook for 5 minutes, until the berries give some of their juice. Set aside.

  3. Stir all the crumble topping in a small bowl and set aside.

  4. For the cupcakes, combine the dry ingredients in a large bowl.

  5. In a medium bowl, beat the butter, milk and egg.

  6. Add the butter mixture to the dry ingredients and stir until just combined.

  7. Using about half the batter spoon a little batter into each cup, then spoon a layer of the filling.

  8. Add the remaining batter and top with the crumble topping. Bake for 20 minutes.

  9. Remove pan from the oven and cool for 5 minutes. Serve cupcakes warm, with custard if desired.

  10. Store in an airtight container for up to 3 days, or freeze for up to 3 months.
