Mixed Berry Corn Pancakes (Redi-Set-Go Recipe)

Recipe Ingredients for Mixed Berry Corn Pancakes

8 1/2 ounces jiffy corn muffin mix
1 egg
2 tbsp margarine
1/2 cup skim milk
1/2 cup blueberries

Recipe Directions for Mixed Berry Corn Pancakes

  1. Combine muffin mix, egg, margarine and milk

  2. Stir in berries

  3. Place divider pan inside Xpress Redi-Set-Go

  4. Spray divider pan with non-sticfk cooking spray and preheat

  5. Add 3/4 cup of the mixture to each well

  6. Cook around 7 minutes or until well-browned and a toothpick inserted into the center comes out clean

  7. Wrap in foil to keep warm or serve while making the last batch

  8. Serve with blueberry, raspberry or maple syrup
