Recipe Ingredients for Mixed Beans and Bulgur

1 small onion, chopped
2 cups eggplant, chopped
1/2 large red bell pepper, chopped
2 garlic cloves, chopped
2 tbsp olive oil
19 ounces mixed beans, rinsed and drained
1 cup vegetable stock
1/2 cup bulgur
1/2 tsp ground black pepper
1 large tomato, chopped
1/2 tsp dried mint

Recipe Directions for Mixed Beans and Bulgur

  1. Saute onions, eggplant, red bell pepper and garlic until onions are transluscent.

  2. Reduce heat and add beans, stock, bulgur, and pepper. Cover and cook 5 to 8 minutes or until bulgur is cooked, adding a little water if necessary.

  3. Stir in tomatoes and mint and remove from heat. Let sit for 5 minutes before serving.
