Recipe Ingredients for Mixed Bean Soup

113 grams Lentils
1/2 cup dry Peas Green Split Dry
66 grams Beans Pinto
56 grams Peas Black-Eyed
1/4 cup Kidney Beans
150 grams Beans Black
200 grams Beans Cannellini Dried Boiled
66 grams Beans Baby Lima
45 grams Organics Split Yellow Peas Dry
20 oz Carrots
12 stalk, large (11"-12" long) Celery
2 medium (2-1/2" dia) Onions
3 1/2 tbsp Olive Oil

Recipe Directions for Mixed Bean Soup

Combine all dried goods in a large pot and cover with with water 2 inches above beans. Lightly salt the water. Bring to boil and let boil for 3-4 minutes. Remove from heat and let sit covered for 1 1/2-2 hrs. Drain water, rinse the beans and drain again. Added 6-7 cups of water to pot. Chop onions and saute in oil until translucent. Add to pot. Simmer the pot with lid on it for 1 - 1/2 hours, stirring occasionally. If beans are tender, add chopped celery and carrots to pot and let simmer for 1/2 hour - 45 minutes. Season to taste. Ready to serve.
