Recipe Ingredients for Mixed Bean Soup

16 oz beans, dry, mixed
1 yellow onion
56 g bacon bits
1 tbsp butter
1 taco seasoning

Recipe Directions for Mixed Bean Soup

  1. Soak dry beans over night; rinse.

  2. In a large pot, cover beans with water and boil for 1 hour.

  3. Meanwhile, in a small skillet, saute onion and bacon bits in butter.

  4. After one hour, test beans. If they are soft, add onions, bacon and taco seasoning. (Taco seasoning is to taste...I prefer 3T, use less if you are watching your sodium intake.) Simmer another 15-30 minutes to let flavors blend.

  5. ***Tip, if you prefer a "creamier" soup, stir often...if not, do not over stir or you will break the bean's skin and create a thicker soup.
