A soup with a variety of beans and spinach, goes very well with brown rice or barley.

Recipe Ingredients for Mixed bean soup

1/2 cup garbanzo beans
1 tbsp split peas
1 tbsp kidney beans
1 tbsp pinto beans
1 tbsp navy beans
2 tbsp lentils
1 tbsp lima beans
1 tbsp green peas
3 cups spinach
1 onion
1 tbsp olive oil
1 tsp salt
1/2 tsp pepper
1 tsp chili powder
1 tsp coriander powder
1 tsp cumin powder
3 cups of water
1 tsp cilantro

Recipe Directions for Mixed bean soup

  1. Soak the beans in boiling water for 8 minutes and drain.

  2. Bring water to boil, add the beans and boil them for an hour and half or until tender.

  3. Heat oil in a pan

  4. Add onions and saute for 2 minutes

  5. Add spinach and cook for 5 minutes

  6. Add beans and water and bring to boil.

  7. Add the spices, salt and pepper.

  8. Garnish with cilantro
