Recipe Ingredients for Mixed bean soup with Chicken

3/4 cup Select Dried Split Green Peas
0.33 cup Pinto Beans
150 grams Lentils
118 grams Beans Black
60 grams Beans
60 grams Peas Black-Eyed
190 grams Beans
2 medium (2-1/2" dia) Onions
4 1tsp Olive Oil
27 oz Carrots
14 stalk, large (11"-12" long) Celery

Recipe Directions for Mixed bean soup with Chicken

Combine all dried goods in a large pot and cover with water 2 inches above beans. Lightly salt the water. Bring to boil and let boil for 3-4 minutes. Remove from heat and let sit covered for 1 1/2-2 hrs. Drain water, rinse the beans and drain again. Added 6-7 cups of water to pot. Chop onions and sauté in oil until translucent. Add to pot. Chop chicken into small pieces then brown in same pan as onions - season to taste. Add to pot. Simmer the pot with lid on it for 1 - 1/2 hours, stirring occasionally. If beans are tender, add chopped celery and carrots to pot and let simmer for 1/2 hour - 45 minutes. Season to taste with salt, pepper and garlic powder. Ready to serve.
