Recipe Ingredients for mix-n-match muffins

1 1/2 cups flour
1 1/2 cups whole wheat flour
1 tsp salt
1 tbsp cinnamon
1/2 tsp baking powder
1 tsp baking soda
2 eggs
1 cup vegetable oil
2 cups splenda or sugar
1 tbsp vanilla
2 cups apples, chopped

Recipe Directions for mix-n-match muffins

  1. Sift together dry ingredients. In a separate bowl, beat eggs; add oil and sugar; cream together. Stir in vanilla, and your choice of mix-n-match. Add dry ingredients; mix well.

  2. For bread: spoon into two greased loaf pans. Bake at 325 for 1 hour.

  3. For muffins: Spoon batter into muffin tins and bake at 375 for 15 minutes

  4. Makes 2 loaves or 12 muffins
