Recipe Ingredients for Mix-and-Match Jambalaya

1 tbsp olive oil
1 onion, diced
2 cloves garlic, minced
2 sausage Field Roast apple sage vegan sausage links
513 g or 1 package chicken-flavored seitan, cubed
2 red bell peppers, chopped
15 oz diced tomatoes
1 tsp Tabasco sauce
1/2 tsp liquid smoke
1/4 tsp red pepper flakes
3 c water
1 cube vegan bouillon
1 1/2 c uncooked brown rice

Recipe Directions for Mix-and-Match Jambalaya

  1. Heat the oil in a skillet over medium heat and saute the onion until translucent, 3-5 minutes. Add the garlic and saute for 1 minute longer.

  2. Combine the sauteed onion, sausage, seitan, bell peppers, tomatoes, hot sauce, liquid smoke, red pepper flakes, water, bouillon, and salt and pepper to taste in the slow cooker. Cook on low for 6-8 hours.

  3. About 1 1/2 hours before serving, add the brown rice. If the mixture looks dry, add 1-2 c extra water. Turn up the slow cooker to high and cook 1 1/2 hours or more, until the rice is done. Taste and adjust the seasonings.
