this always gets made with different spices, so spice to taste. possible substitutes of cardamom, turmeric, cumin and paprika (which together make a mild curry). Ginger, sesame oil split peas, & lentils are also good to add.

Recipe Ingredients for mix and match curry

13 1/2 oz coconut milk, can
1 medium squash
1 medium onion
1 cup carrots
3 cloves garlic
1 tbsp olive oil
1/2 cup water
2 tsp curry powder
2 tsp salt
1 tsp black pepper
1 tsp cayenne pepper
1 dash brown sugar

Recipe Directions for mix and match curry

  1. Dice carrots and butternut squash. Boil carrots until tender.

  2. Sauté onions until light brown. Add carrots and butternut squash. Stir in coconut milk. Put heat to medium stirring constantly. Add spices. Simmer on low heat for at least one hour stirring occasionally. Serve hot.

  3. This is often served over rice.
