I use a muffin tin to bake these for perfect portion control. This recipe makes 12 "muffin" quiches of 3-4oz each.

Recipe Ingredients for MissMaryMac - Southwest Sausage-Crust Quiche

6 Patties Morningstar Breakfast Sausage
10 oz Frozen Spinach
1 cup Shredded Mexican Blend Cheese, reduced-fat
8 Eggs
1/3 cup Salsa
1/2 cup Cottage Cheese, fat-free
1/2 tsp Salt
1/2 tsp Pepper

Recipe Directions for MissMaryMac - Southwest Sausage-Crust Quiche

  1. - Preheat Oven to 400 degrees

  2. - Thaw the spinach and squeeze very dry

  3. - Cook sausage (if you didn't buy crumbles) and then chop fine

  4. - In another bowl, mix all remaining ingredients

  5. - Spray muffin tin

  6. - Spoon the sausage mixture into each muffin tin and pat down (faux crust!)

  7. - Pour the egg/spinach mixture on top

  8. - Bake for 20-25 minutes
