This is a great little breakfast casserole/quiche that uses Miracle Noodles or Shirtaki Noodles so they add little to no carbs - but a touch of fiber instead!

Recipe Ingredients for MissMaryMac - Miracle Breakfast Bake

8 oz Tofu Shirataki Noodles
2 cups Egg Beaters
6 oz Mushrooms, sliced
1 cup Fat-Free Cottage Cheese
5 slices Turkey Bacon
1 tsp Black Pepper
2 oz Shredded Cheese, Low-Fat

Recipe Directions for MissMaryMac - Miracle Breakfast Bake

  1. - Zap noodles in microwave for a minute

  2. - Strain noodles through paper towels in a collander and let site, pat dry with more towels - these should be very dry

  3. - Cook Bacon

  4. - In a bowl, combine, egg beaters, cottage cheese, mushrooms, peper and mix well

  5. - Add in dried noodles and crumbled bacon

  6. - Pour into a quiche pan (spray with cooking oil)

  7. - Bake at 375 degrees for 30 minutes
