This is a great little appetizer that translates perfectly into a little meal for post-op WLS patients.

Recipe Ingredients for MissMaryMac - Ham & Avocado Rollups

3 Avocados, mashed
1 tbsp Lemon Juice
1 Onion chopped
5 oz Fat-Free Cream Cheese
18 slices Deli Ham, lean
1 Salt
1 Pepper

Recipe Directions for MissMaryMac - Ham & Avocado Rollups

  1. - Mash the avocados

  2. - Cream in the cream cheese and lemon juice

  3. - Add in the finely chopped onions, salt, pepper

  4. - Place ham slices overlapping in a line

  5. - Spread with the mixture and roll up tight

  6. - Wrap in saran wrap and freeze

  7. - Remove from freeze and cut into 2oz pieces at least 1 hour before serving

  8. ** Sometimes its easiest to make 3 or 4 rolls

  9. ** Ideas: sprinkle with pine nuts or other nuts before serving is a nice touch
