Grilled chicken breasts with goat cheese and jalapeno pepper jelly - this is really good.

Recipe Ingredients for Miss Vito's Chicken Mezra

10 oz chicken breasts, skinned, boneless
1/4 cup celery, chopped
1/4 cup onion, chopped
2 tbsp cilantro, chopped
1 tsp olive oil
1 oz whole wheat flour
1/8 tsp peppercorns, ground
2/3 cup chicken broth
1 1/2 oz goat cheese
2 tbsp jelly, jalapeno pepper

Recipe Directions for Miss Vito's Chicken Mezra

  1. Dredge each chicken breast in flour/pepper mixture, saute in oil in non-stick pan until brown. Reserve.

  2. Add vegetables to pan and saute until soft (add more oil if necessary, or some of the chicken broth).

  3. Stir in broth and add chicken breasts - simmer for ten minutes or until done to desired level (do not overcook)

  4. Remove from pan and separate from vegetables; top with goat cheese and jelly

  5. Broil until hot and bubbly

  6. Serve with vegetables on the side if you don't like to throw them away.
