Recipe Ingredients for Miso Soup

4 cups Hon Dashi Soup Stock
120 grams tofu
2 tablespoons miso paste
1/4 cup chopped green onion
5 grams Wakame seaweed, dried

Recipe Directions for Miso Soup

  1. Pour dashi into a medium-sized saucepan and heat on medium-high.

  2. In a small bowl put the dried wakame and pour enough water until it?s well-covered. The water will be soaked up by the seaweed causing it to expand.

  3. Put miso paste in a small bowl and add spoonfuls of warm dashi taken from the pan, just enough quantity to melt the paste.

  4. Stir thoroughly until it?s completely dissolved.

  5. Pour the mixture into the pan and stir well.

  6. Cut tofu into cubes about1/2-inch per square.

  7. Add tofu into the saucepan.

  8. Lower the heat to simmer.

  9. Add your soaked wakame into the miso soup mixture and simmer for about 2 minutes.

  10. Do not let the soup boil, because this will ruin the flavors.

  11. Ladle soup into individual serving bowls.

  12. Chop the spring onions and sprinkle on the bowls of soup for garnish.
