Miso Soup Recipe

Quick to make soup, great when you're not feeling so well. Miso good for restoring immunities.

Recipe Ingredients for Miso Soup

2 carrots, sliced
1/4 head raw cabbage sliced
2 yellow onions, sliced
1 T sesame oil
5 tsp mugi miso
4 c water

Recipe Directions for Miso Soup

  1. Saute sliced vegetables in sesame oil.

  2. Bring 3.5 cups of the water to boil. Add water to saute when vegetables have wilted.

  3. Simmer soup for 30 minutes, covered.

  4. While soup simmers, put miso in with the remaining 1/2 cup of water, and let it dissolve.

  5. After 30 minutes, remove soup from heat, and let it cool for 10 minutes. Add miso. (Don't ever let the miso get boiled, since it will destroy the beneficials in the miso.)

  6. Garnish with chopped green onion on top.

  7. To boost the protein, server over diced tofu.
