Miso Soup with tofu and vegetables

Recipe Ingredients for Miso Soup

1/2 cup dried wakame
1/4 cup shiro miso
6 cups vegetable broth
14 ounces firm tofu, drained and cubed
1/2 cup green onions, chopped
1 cup mushrooms, sliced

Recipe Directions for Miso Soup

  1. Combine wakame flakes with warm water to cover by 2 inches. Let stand 15 minutes.

  2. Whisk together miso and 1/2 cup of the chicken broth in a small bowl until smooth.

  3. Heat remaining chicken broth in a medium pan with green onions and mushrooms until boiling. Turn off heat and add wakame (drained) and tofu cubes.

  4. Let cool and divide among 4 2-cup Ziploc cylinder containers.
