Recipe Ingredients for Miso Soup with Quinoa

1 carrot
1 stalk celery
1/4 cup mushrooms
1 scallion
1 cup spinach
1/4 cup brocolli
1/2 cup chopped kale
1/4 cup Quinoa
1 tbsp miso

Recipe Directions for Miso Soup with Quinoa

  1. Boil carrot and celery in 2 cups of water for 5 min.

  2. Add reaming vegetables and cook another 3 min

  3. Remove from heat

  4. Stir in quinoa and spinach. stir until spinach is wilted (1 min)

  5. Add Miso. Stir to dissolve.

  6. Note: Quinoa is optional. Adding the 1/4 cup pre-cooked Quinoa adds about 130 calories and good B Vitamins , Iron, Magnesium, Phosphorus and zinc.
