Recipe Ingredients for Misc: Veggie Scramble

1 large egg
1/5 c. zucchini, diced
1 mushroom, diced
1/5 c. tomato, diced
1/8 c. avocado, diced
1 T. shredded mozzarella
1 Salt and pepper to taste

Recipe Directions for Misc: Veggie Scramble

  1. Heat a small frying pan over medium-low heat. Spray with non-stick spray.

  2. When pan is warm, add zucchini, mushroom, and tomato. Saute until softened. Add salt and pepper to taste.

  3. Crack egg over vegetables and stir to scramble everything together. While egg is cooking, add cheese and avocado.
