Korean version of potstickers, dumplings, gyoza, etc.

Recipe Ingredients for Misc: Mandoo

1/2 lb. ground pork
1/2 lb. shrimp
1 egg
2 medium carrots, finely diced
2 green onions, finely chopped
1 c. wood or shiitake mushrooms, diced
1 c. chopped cabbage
1 T. fresh grated ginger
3 cloves garlic, minced
1/2 tsp. salt
1/2 tsp. black pepper
1/2 tsp. red pepper
2 tsp. brown sugar
1 T. sesame oil
2 T. soy sauce
2 T. mirin
16 oz. round gyoza wrappers (60 wrappers)
3 T. olive oil (for cooking)

Recipe Directions for Misc: Mandoo

  1. Mix all ingredients except for wrappers and olive oil.

  2. Place a rounded teaspoonful of meat mixture onto a wrapper.

  3. Wet the edge of the wrapper all the way around. Fold wrapper and squeeze edge together.

  4. To freeze, place in a single layer on a baking sheet and put in the freezer until hard. Remove from baking sheet and store in a Ziploc bag.

  5. To cook, heat 1 T. olive oil in a large pan over medium heat. Add 12-15 of the mandoo and cook until golden brown on the bottom, about 2 minutes. Add cup of water to the pan and cover. Cook until the water is absorbed, about 4-6 minutes.

  6. Alternatively, you may steam the dumplings or cook them in a broth-based soup.
