hey you can use fresh peas if they are in season... yummy!

Recipe Ingredients for Minted Pea Soup (A-)

1 tbs butter
1 onion
1 potato
400 g frozen peas
6 tbs chopped mint leaves
60 g Creme Fraiche

Recipe Directions for Minted Pea Soup (A-)

  1. melt butter in sauce pan, add onion and potato and cook for 5 mins. Add 1 1/2 pints of veg stock, bring to the boil, reduce heat and simmer for 10 mins or until potato is tender.

  2. Add the peas to pan and cook for a further 3-4 mins. Season well to taste. Remove from heat and stir in mint. puree in food processer or blender until smooth. Ladle into warmed bowls and serve, add a dollop of creme fresh if liked...
