Recipe Ingredients for Minted Couscous Greek Salad

2 cup Vegetable Broth
1.5 cup Whole Wheat Couscous
1 medium raw Bell Pepper Red
1 medium Yellow Hothouse Bell Pepper
1 stalk, medium (7-1/2" - 8" long) Celery
1 cup, chopped Onions, Spring Or Scallions
10 oz Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds
12 oz Artichoke Hearts Marinated
0.33 cup, crumbled Feta Cheese
10 olives Krinos Pitted Kalamata Olives
4 fl oz Organic Vegetable Broth
4 tbsp Extra Virgin Olive Oil
5 tbsp Lemon Juice, Canned Or Bottled
1 tsp Lemon Peel
1 cloves, raw Garlic
4 tablespoon Mint
1 tsp Marjoram, Dried
0.5 tsp Spices Ground Black Pepper
0.5 tsp Salt, Table

Recipe Directions for Minted Couscous Greek Salad

  1. Bring 2 cups of broth and 1/4 cup water to a boil. Add couscous and remove from heat. Allow to sit for 5 minutes. Transfer to a large mixing bowl and fluff with a fork. Add peppers, celery, scallions, chickpeas, artichike hearts, feta cheese and olives.

  2. Use remaining ingredients to make a vinegrette. Add to salad. Enjoy
