Steamed carrots with mint and pumpkin seeds

Recipe Ingredients for Minted Carrots with Pumpkin Seeds

6 medium carrots
1/2 tbs fresh chopped parsley
1 tbs fresh chopped mint
1 tbs pumpkin seeds
2 tbs lemon juice
1 extra virgin olive oil to taste
1 salt
1 pepper

Recipe Directions for Minted Carrots with Pumpkin Seeds

Bring lightly salted water to a boil in steamer with a tight fitting lid. Chop carrots into pieces. Steam the carrots in basket until al dente (slightly crunchy inside) Chop rest of ingredients and toss with carrots when done.
