In this recipe I've substituted one potato and 2 parsnips for the 4 turnips (just because the shops didn't have them). Feel free to do whichever you like.

Recipe Ingredients for Minted Beef and Turnip Stew

1000 grams Beef, Chuck, Tender Steak
2 medium raw Onion Yellow
2 parsnip (9" long) Parsnips
150 grams Center Cut Bacon
1 glass (3.5 fl oz) Wine, Table, Red
1.5 tbsp Vinegar red wine
1 oz Mint
1 medium (2-1/4" to 3-1/4" dia.) Potatoes, Boiled
1 serving Beef Stock

Recipe Directions for Minted Beef and Turnip Stew

  1. Trim the beef and cut it into 4cm cubes. Put the beef, onion, turnips (or parsnips and potato), bacon, wine, vinegar, stock and mint in the slow cooker.

  2. Cook on low for 4 hours, or until the beef is tender.

  3. Remove the mint sprig. Season to taste with salt and pepper and serve with crusty bread.
