juice of one lemon Can substitute almonds, pine nuts, etc.

Recipe Ingredients for Mint Pesto

3 cups mint leaves, washed and dried
4 garlic cloves ( you can use up to 6 )
1/2 cup pistachio nuts
1 cup olive oil
1/3 cup lemon juice
1 Salt and pepper to taste

Recipe Directions for Mint Pesto

Combine mint, garlic and nuts in a food processor. Blend to a paste, add lemon juice,salt and pepper. While processor is running, pour oil through feed tube and process until smooth. Store in refrigerator. Use as bread dip, or on linguini or angel hair pasta, on top of cream cheese, or as base for french bread pizza.
