Recipe Ingredients for Mint and Pea Soup

1 1/2 liters water
800 g frozen peas
30 g mint
100 g red onion
50 g lemon juice
50 g chili pepper

Recipe Directions for Mint and Pea Soup

  1. Boil the peas and onion in half of the water for 8 minutes.

  2. Remove from the heat and add the remaining water. Allow to cool.

  3. Blend the peas and onion with the water in batches, adding lemon, chilli and mint.

  4. Once returned to the pan, bring to the boil then reduce to a simmer for 5 minutes.

  5. Allow to cool. Place a large food bag into a mug, fill with the cool soup and tie. Do this for each portion of soup, freezing what you don't need until later.
