Vegan Mini Chili Pies are great for appetizers, side dishes or even the main dish. You can easily substitute the tofu for lean ground beef and the soy milk for skim milk for you meat lovers out there. That would make 2 of the chili cups at about 125 calories...enjoy!

Recipe Ingredients for Miniature Chili Pies

1 tbs tofu, crumbled
1/2 tbs onion, minced
1/2 tbs water
1 tsp ketchup
1/4 tsp flour
1/4 tsp cumin
1/8 tsp garlic powder
1 pinch chili powder
1 1/2 tbs bisquick
1/8 tsp chili powder
1 tsp soy milk

Recipe Directions for Miniature Chili Pies

  1. Cook meat and onion in a small sauce pan over medium heat.

  2. Add water and next 5 ingredients. Cover and cook over low heat for 5 minutes, stirring frequently.

  3. Combine baking mix, a pinch of chili powder and milk in a small bowl stirring well.

  4. Divide dough into 2 equal portions. Roll each portion between 2 sheets of heavy duty plastic wrap into a 2 1/2 inch circle. Fit dough into 2 muffin cups coated with spray.

  5. Spoon "meat" mixture evenly into dough lined muffin cups. bake at 400 for 8 minutes. Sprinkle each pie with 1/4 tsp of vegan cheddar cheese if you wish and return to oven for 2 minutes.

  6. Serve Immediately
