From the Fresh Foods Cookbook I choose to use bell pepper, broccoli and tomato as my vegetable. I changed the dried basil to fresh. Instead of using ICBINB, I choose to us olive oil to saute my veggies.

Recipe Ingredients for Mini Vegetable Quiches

1 red bell pepper
1 c broccoli
1 roma tomato
2 tbsp green onions, chopped
2 tbsp olive oil
4 whole wheat tortillas, 8"
1 c egg beaters
1 c skim milk
1 tbsp basil, fresh

Recipe Directions for Mini Vegetable Quiches

  1. Over medium high heat saute veggies and green onions in olive oil.

  2. Arrange tortilla pieces in 8 (6 oz) greased custard cups, placing the point at the center bottom and press lightly to form shape of cup.

  3. Divide veggie mixture evenly among the cups.

  4. In small bowl combine Egg Beaters, milk & basil.

  5. Pour evenly over veggies.

  6. Place cups on baking sheet.

  7. Bake 350 degrees F for 20 to 25 minutes.

  8. Let stand 5 minutes before serving
