Bite-sized vegan 'quiches' made using spinach, mushrooms and tofu

Recipe Ingredients for Mini vegan quiches

4 cloves garlic
100 g onion
200 g frozen spinach
120 g raw mushrooms
5 g dried chives
5 g dried parsley
175 g silken tofu
1 tsp raw tahini
1 tbsp nutritional yeast

Recipe Directions for Mini vegan quiches

Mix all ingreds in food processor,adding salt/pepper/seasinings to taste. Bake in hot oven in a silicon mini muffin pan (you might need to do 2 batches if you have a 12-cup pan). Using a silicon pan makes it easy to remove. Let them cool and firm up before removing.
