Recipe Ingredients for Mini Spinach and Feta Frittatas

1/3 cup finely chopped onion
1/2 cup chopped bell pepper
1 teaspoon extra virgin olive oil
1/4 teaspoon black pepper
5 ounces frozen spinach (about half a box)
2 tablespoons grated parmesan cheese
1/4 cup reduced fat feta cheese
7 large egg whites (or about 1 cup egg substitute)
3 large eggs

Recipe Directions for Mini Spinach and Feta Frittatas

  1. Preheat oven to 375.

  2. Thaw frozen spinach.

  3. Saute onion and bell pepper in 1 tsp of olive oil until soft and translucent.

  4. Drain onion and bell pepper and combine all ingredients, stirring well with a whisk.

  5. Coat 36 mini muffin cups with cooking spray. Spoon about 1 tablespoon egg mixture into each muffin cup.

  6. Bake at 375 for 16-20 minutes or until lightly brown. Cool 5 minutes on a wire rack. Remove frittatas from muffin cups.
