These quiches are based on what is allowed on the South Beach Supercharged Phase 1 diet. Delicious! Note: I use lower sodium turkey bacon

Recipe Ingredients for Mini Quiches

4 eggs
2 ounce part skim mozzarella cheese
10 ounce spinach
4 slices turkey bacon
1/4 cup onion
1/4 cup mushrooms

Recipe Directions for Mini Quiches

  1. Preheat oven to 350.

  2. Cook bacon over med heat until crisp (about 10 minutes). In the meantime, thaw out package of spinach, according to directions.

  3. Scramble 4 eggs and add 1 chopped onion, chopped mushrooms, and diced cheese.

  4. Allow crisped bacon to cool on paper towels and cut in small pieces.

  5. Drain spinach.

  6. Add bacon and spinach to the egg mixture.

  7. Divide mixture into 12 cupcake tins which have been sprayed with non-stick cooking spray.

  8. Bake in preheated ovenfor approximate 20 minutes, or until edges are golden.
