Recipe Ingredients for Mini Quiches

14 grams center cut bacon, cooked and crumbled into small pieces
8 eggs
1 cup soymilk, light plain
8 ounces mushrooms, sliced
3 large scallions, diced
28 grams mozzarella cheese, fat free and shredded
1 teaspoon freshly ground pepper
6 tbsp wheat bran
1/2 tsp salt
1/4 tsp garlic powder

Recipe Directions for Mini Quiches

  1. Position rack in center of oven; preheat to 325F. Place paper liners in a muffin tin.

  2. Cook two bacon slices. Cool and chop into tiny pieces.

  3. Lightly pan cook mushrooms for five minutes. Transfer to the bowl with the bacon and mix. Stir in scallions, cheese, pepper, salt and garlic.

  4. Whisk eggs and soymilk until frothy. Slowly add wheat bran and stir.

  5. Divide the egg mixture evenly among muffin cups.

  6. Sprinkle a heaping tablespoon of the bacon mushroom mixture into each cup.

  7. Bake until the tops are just beginning to brown, 25 minutes.

  8. Remove paper cups from muffin tin and place on a wire rack to cool (5 mins).

  9. Enjoy!
