Mini Quiche Recipe

A great start to your morning or have one as a snack mid-day. Make these on the weekend and then pop in the toaster oven to re-heat during the week. Any vegetables can be substituted, as can regular flour.

Recipe Ingredients for Mini Quiche

5 tablespoons Buckwheat Flour
1 tablespoon Flaxseed, ground
4 tablespoon Skim Milk
4 Eggs
1/2 cup Ricotta Cheese, Light [i96036]
6 oz. FAGE Total 0% (greek yogurt)
1/4 teaspoon garlic powder
1/2 teaspoon black pepper
1/2 teaspoon oregano
1 oz. parmesan cheese
1 teaspoon Olive Oil
3 cups spinach
1 cup leeks
1 oz. shallot

Recipe Directions for Mini Quiche

  1. Preheat oven to 350 degrees.

  2. Sautee shallot and leeks in non-stick pan with 1 teaspoon of olive oil. Add spinach and sautee until wilted. Let cool.

  3. Lightly coat 2 6-cup muffin pans with nonstick spray.

  4. Combine flour with ground flaxseed and milk. Make a paste and drop 1 heaping teaspoon to each muffin cup and spread to coat the bottoms evenly.

  5. Whisk eggs, egg whites, ricotta and yogurt in a bowl. Add garlic, black pepper, oregano, and parmesan, Whisk until combined.

  6. Squeeze excess liquid from veggies. Stir in vegetables and divide the mixture among the muffin cups.

  7. Bake 30 - 35 minutes until the quiches are lightly browned and a knife comes out clean from the center.

  8. Let them cool and use a butter knife to remove them from the pans.
